How mail servers communicate

How do mail servers communicate?

If my email is aa@21cn.com;
I want to send to hotmail mailbox bb. @ Hotmail.com

Then, my email must be sent to the 21cn server, and then sent by 21cn to the hotmail server.

Now my question is, how exactly does the 21cn server send mail to the hotmail server? Does the communication between the mail servers use any standard protocol?

Don't you think about this problem. Hotmail does not provide smtp server for our users. So we can't use foxmail to send and receive hotmail mail.

Why is 21cn server able to communicate with hotmail via smtp ??
